Hi there! Welcome to my blog about transitioning to a plant based diet.  I feel the term vegan may sound a little harsh and restrictive.  It definitely always seemed like something that I couldn’t accomplish, and so I put it off for years while I tried all kinds of different diets to help me improve nutrition and get to an optimal weight.

So why do this? After a string of stressful days, I realized that I had been feeling super crappy lately.  It then occurred to me that I hadn’t eaten a vegetable in maybe 2 weeks or so.  This is not good.  As a grown educated woman, I realize that this is really not good.

Enter the notion of a plant based diet…but…

I love meat.  I love cheese more.  My kids won’t jump straight to a vegan diet, so do I have to start making double meals? What do I do when I go out?  Or travel? Will I get enough protein?  Will everything taste like cardboard (or worse, raw celery)?  I work, so do I have to pack a lunch everyday? There are a lot of foods that I know have meat or cheese — how do I figure out what foods are totally plant based?  Is there a decent non-dairy milk? Will changing my diet cause me to feel better?  Will I lose weight? Will my skin glow like some people claim? How about cravings? Will it affect my sleep? Energy? I’m looking forward to getting some answers to these questions.  Join me on my journey.  Encourage, criticize, or make snide comments…all are welcome.
